Sloppy Joes                                     Grandma W.
1lb Ground Meat
1 T sugar
1 TSP Salt And Dash Of Pepper
½ Cup chopped onion
1 T Vinegar
¼ Cup Celery chopped
¼ Cup Green Pepper
1 Can Tomatoe Sauce
¼ Cup Ketchup
1 ½ TSP Worc. Sauce


Cook Hamburger meat and mix all
ingredients together until hot. Place on
Hamburger Buns and Enjoy!

Apple Crunch

1/3 Cup Flower
¾ Cup Brown Sugar Packed
1/3 Cup Margarine
5-6 Tart Apples Pared and Sliced (Green Apples)



 


Mix flower sugar and margarine together until
crumbly. Place sliced apples in 8’ pan and poor
 mix on top. Place in a 350 oven for about 30 min.
El Torito Sopa De Tortilla (Tortilla Soup)
8 Cups Chicken Broth
2 Medium Chicken Breasts, Boneless, skinless, poached, and shredded.
1 Medium Red Onion, Diced
2 Carrots, peeled and Diced
1 Potato, Peeled and diced
¼ Cup Tomato Paste
1 Bay Leaf
2 Clove Garlic Peeled And Chopped
½ Tsp Chipotle Chili En Adobe
1 Tsp seeded chopped pickled Jalapeno
1 Tsp Dried Mexican Oregano
1/8 tsp Cumin
¾ Tsp Salt
½ Pepper To Taste
1 Zucchini Diced
1 Yellow Squash Diced
½ Red Bell Pepper Seeded and Diced
1/8 Fresh Lime juice
2 TBS Sweet Sherry
1 TBS Chopped Cilantro
1 TBS Chopped Fresh Mint
GARNISH
4 6-inch Corn Tortillas Cut Into Strip
4 TBS Veggie Oil
8 oz Shredded Jack Cheese
12 Slices of Avocado
12 Cilantro Sprigs


Combine first 14 ingredients in a large stock pot. Bring to a boil and simmer for approximately 20 minutes, season to taste. Add zucchini, yellow squash, bell pepper, lime juice and sherry. Bring to a boil again. Simmer another 15 minutes. Remove Bay leaf, add cilantro and mint stir and remove from heat. Soup may be frozen n batches if desired.

To Assemble:
Fry tortillas in hot oil until crisp. Drain on paper towels and set aside. Ladle soup into each bowl. Sprinkle with shredded cheese and tortilla chips. Garnish with avocadoes and cilantro sprigs.
Banana Nut Bread
2 Cups Flower
½ tsp Baking Soda
½ Cup Crisco
2 Eggs
1 Cup Sugar
½ tsp Baking Powder
½ tsp Salt
3 Bananas Smashed
½ Cup Nuts or Raisins




Mix all ingredients well and pore into meatloaf pan. Bake at 350 for 45 minutes to one hour. Let pan stand until bread is slightly cool before removing.
Oven Fried Fish
½ Cup Milk
1TBS Margarine
1/8 t Pepper
Bread Crumbs
Fish of Your Choice



Mix milk and pepper in a bowl. Add bread crumbs into another bowl. Dip Fish into milk and then into bread crumbs. Place into a well greased pan and drizzle with melted butter. Place in 500D oven uncovered turning and basting for 10-15 minutes until golden brown.
