Raisin Ham Sauce                                                  Grandma W.
½ Cup Brown Sugar
1 TBS Corn Starch
1 ¼ Cup Water
½ Cup Raisins
3 TBS Lemon Juice
2 TBS Dijon Mustard
¼ tsp Cinnamon


In a pan combine brown sugar and cornstarch stir in water and cook until clear and thick. Stir in the last remaining four ingredients.

Carrot Cake    
                                                 Grandma W.
1 ½ Cup Oil
2 tsp Baking Soda
4 Eggs
2 tsp Baking Powder
2 tsp Cinnamon
1 tsp Salt
2 Cups Flower
2Cups Sugar
½ Cup Crushed Pineapple Drained
3 Cups Carrots Finely Grated And Lightly Packed.
Nuts If Desired.


Blend oil and sugar, add eggs and beat well. Add carrots pineapple and all sifted ingredients. Add nuts if desired. Bake in three 8” layer pans or one 9x13x2. Bake at 300D for 45 minutes to one hour.
Carrot Cake Frosting
1-8oz Pkg Cream Cheese
¼ Cup Margarine
1 Pkg Powdered Sugar
1 Tsp Vanilla

Beat all ingredients together until smooth. Enough for a three layer 8” Cake.
Skirt Steak with Chimichurri
8 Cloves Garlic
1 ½ Cups Fresh Cilantro Leaves and Stems
1 Cup Distilled White Vinegar
3 Bay Leaves
2 Tsp Each Of ground Cumin, Dried oregano, Dried Thyme and Fresh Ground Pepper
1 TBS Salt
½ Cup white Onion, Coarsely Chopped
½ Cup Veggie Oil
6 Skirt Steaks, About 7oz Each Trimmed

Chimichurri
6 Cloves of Garlic
1 Bunch Fresh Parsley Thick Stems Trimmed
3 Bay leaves
2 Jalapeno Chilies With seeds, Cut into thirds
1 Tsp Salt
¼ Cup Fresh Oregano Leaves
¼ Cup Distilled White Vinegar
1/3 Cup Extra Virgin Olive Oil.


Instructions: For marinate, place garlic, cilantro, vinegar, bay leaves, cumin, oregano, thyme, pepper, salt, onion and veggie oil in a blender or food processor; process until ingredients are coarsely chopped. Combine marinade and steaks in 13x9 inch glass pan or large plastic bag. Cover pan marinate in refrigerator 3 hours or over night, turn steaks occasionally
    Heat grill to high or heat oven to 400 degrees. For Chimichurri, Combine Garlic, parsley, bay leaves and jalapenos in food processor; pulse to finely cop. Add salt, oregano, vinegar and oil; process for about one minute until mixture is well combined. Set aside.
    Oil grill grate. Grill steaks about 3 minutes per side for medium doneness or to desired doneness. Remove to platter. Serve Chimichurri on tops of steaks or on the side.
Bossa Nova Beans

1-16oz Can Baked Beans
1-15oz Can Chili Beans
1-8oz Can Tomato Sauce
½ Cup Chopped Onion
¼ Cup Brown Sugar Packed
¼ t salt
¼ t Garlic Powder
¼ t Pepper
1 TBS Ground Cumin
Jack Cheese Thinly Sliced

Combine beans, tomato sauce, onion, brown sugar, garlic powder, pepper and cumin in a 1 ½ qt casserole pan. Bake at 325 for 1 ½ hours or longer until liquid is reduced. Top with cheese and serve when cheese is melted. Makes 8 Servings.
